Here is my mom's pumpkin bread recipe, which I believe she told me she got out of the newspaper years ago. The most lovely thing about this recipe is you mix it all in one bowl, which if you don't have someone to clean the kitchen when you're done baking, you understand how great that is.
Pumpkin Bread
3 cups sugar
1 cup cooking oil
4 eggs
1 1/2 teaspoon salt
1 teaspoon nutmeg
1 teaspoon cinnamon
2 teaspoons baking soda
1 cup chopped walnuts
3 1/2 cups flour
2 cups canned pumpkin
2/3 cup water
Cream together sugar, oil, and eggs. Add salt, nutmeg, cinnamon, soda, walnuts, flour, pumpkin, and water. Mix well. Pour batter into 4 greased loaf pans (7 x 3 inch). (You can also use this batter to make muffins - just adjust your cooking time). Bake in oven preheated to 350 degrees for about 1 hour, until toothpick stuck in center comes out clean.
